Meal Plan 4/14


We had a wonderful weekend with lots of family time. The weather was amazing, we went to a wedding and danced all night, and weeded our front flower bed on Sunday while the girls played in the sprinkler.


And of course I meal planned…


Homemade spinach spaghetti with turkey meatballs, mushrooms, and broccoli


Chicken and whole wheat dumplings, roasted vegetables

Chicken tacos on homemade tortillas with greek yogurt, lettuce, corn, black beans, and avocado.

Shepards Pie

Shrimp, barley, and pea risotto

Grilled chicken, parmesan quinoa, roasted broccoli

sweet potato gnocci with chicken and broccoli in a light parmesan sauce

Leftover one night

Lunches: combinations of leftovers, salads, beans, frozen veggies, fruit and peanut butter, yogurt/cottage cheese and pineapple, nuts and raisins.


Homemade sausage with whole wheat biscuits

steel cut oats (x2)

apple cinnamon pancakes (x2)

omelets and raisin bran muffins

Kale smoothies and raisin bran muffins

And next week I can’t wait to make some mac and cheese using my homemade spinach noodles!

  2. The noodles look awesome! It was a gorgeous weekend to be outside that’s for sure! Weekends like that always make me miss my husband when he’s deployed. You probably get that. The nice weather weekends is when we do stuff 😦

    • I totally understand what you mean. But I actually found that the months when it was nicer out to go by quicker because you could stay busy and there was so much more to do. The months during deployment in the winter where its cold and dark at 430 pm were torture for me! I’d think “ok its dark out, bed time soon. Ah nevermind its only 5 pm!”. Either way it just plain sucks though for sure! And seriously, we need a playdate asap! You guys can come here and I will make lunch, I can even make it whole30 for you 🙂

  3. how did you make the spinach pasta?..the Kitchen aid?…Cassidy is SOOO dog gone cute…I made the scones yesterday but put in a little more than 1/3 cup of diced apples and some sliced almonds…sprinkled cinamon sugar on top…Mountain Man loved them!!!…as did I…also made the cinamon rolls last weekend and got a rave review on them as well..AND the meat loaf on Friday….how do you do the parmesan quinoa?
