Cornbread– gluten free, sugar free

1/4 cup butter

1/2 cup applesauce

2 eggs

1 cup buttermilk or plain kefir

1 1/4 cup cornmeal

1/2 cup coconut flour

2 Tbs arrowroot powder

1/2 tsp salt

1/2 tsp baking soda

1 cup corn

combine all wet. Combine all dry. Mix together without overstirring.

cook in greased glass pie pan at 375 for 35 minutes.
